The alphabet in vegetables

Remember my horrible debacle of trying to eat 5 fruits and/or vegetables every day? Well, I hope you don't remember, but the bottom line is that I tried and just couldn't get the job done. I failed miserably.

But there is HOPE! Even for me!

Here's a great blog which may just help me on my way: The Great Big Vegetable Challenge: "Take one seven year old boy named Freddie and his mother as they face the challenge of turning him from a Vegetable-Phobic into a boy who will eat and even enjoy some of life's leafier pleasures. I'm in! As long as this doesn't involve anything ridiculous like actually cooking regularly.

Do you have a dehydrator? I've been making zucchini and yellow squash chips lately, and they're low-cal and pretty tasty. You can also dehydrate spinach, crumble it up (or chop it in a food processor) and add it to other foods, like soups, beans, etc.

I have to confess, even I don't eat that many servings per day. It's a lot. I'm working on it, though.

I'm not good at eating enough servings a day, but this challenge is interesting. It's not like there's a time frame for getting through the whole alphabet.

The very cool thing for you doing this with your pre-schoolers is that you can enhance their alphabet learning skills by exploring different flavours of healthy foods.

Which reminds me, Little Runner picked up an eggplant at the supermarket the other day and asked me what it was. Now it's sitting in my fridge, waiting for me to figure out what to do with it...

And thanks for pointing out the veggie blog. I and the little sprouts actually love vegetables, but I am a total failure at cooking in general (we could be unintentional raw foodists) and that Garlic Chicken with Cucumber looked delish. I might even try cooking...
